One of my favorite foods will forever be a grilled cheese sandwich. It’s the ultimate comfort food, with buttery toasted bread and delicious gooey melted cheese.
While a classic grilled cheese is always going to be reliable and easy to whip up, I’d like to have a throwback moment and remind you about the rainbow grilled cheese sandwiches that filled our social media feeds back in the day.
The rainbow grilled cheese, a creation filled with tye-dye-looking colorful cheeses, first gained popularity when Instagram food blogger @hxfoodiexblogger shared photos of a uniquely flavored rainbow grilled cheese from a restaurant in Hong Kong named Kala Toast.
Their rainbow grilled cheese was beautiful-looking and extra special in its preparation, as every cheese color had its own flavor.
Some of the flavor profiles found in their sandwich were basil, lavender, tomato, and straight-up cheese.
After the concept of a rainbow grilled cheese took off, people began making their own versions with different types of bread and cheese, often omitting the unique flavors of the original and sticking with a more classic flavor.
As we get closer to summer and want to feed our kids (or our inner children) more fun foods or even celebrate Pride month with rainbow-colored fun, it’s time to bring the rainbow grilled cheese sandwich back.

Rainbow Grilled Cheese

Ingredients:
1/3 cup of shredded Swiss cheese
1/3 cup of shredded white cheddar cheese
1/3 cup of shredded mozzarella cheese
2 slices of bread (preferably brioche or thick white bread)
2 tablespoons of butter
Pink, green, and blue food coloring
To make a rainbow grilled cheese, you’ll want to start by adding your three cheeses to one bowl and mixing them together.
Then, divide the cheese mixture into three separate bowls to dye them with food coloring. Add 2-3 drops of pink food coloring to one bowl of cheese, green to another bowl, and blue to the third bowl.
Next, you’ll want to carry on as if you were making a normal grilled cheese! Heat up a skillet or non-stick pan on medium heat and spread your butter on one side of your two pieces of bread.
Place one slice of bread butter side down in your pan, then create three rows of each colored cheese on that slice before adding the other slice on top, butter side up.
Let the sandwich grill for about two minutes, or until the cheese is melty and the bottom slice of bread is a nice golden brown color.
Finally, flip your sandwich until the other side of the bread is as toasted as the first and the cheese is totally melted.
Let your sandwich rest on a plate for a minute before slicing it and watching your rainbow cheeses shine in a satisfying, Instagram-able cheese pull.
