Granola Yogurt Pots

Make your own granola, yogurt and fruit breakfast pots. Really delicious and much cheaper to make than shop bought versions.
Lately my son has been loving those pots of yogurt and granola that you can buy in the supermarket so I thought I would batch make my own at home.
They are a little healthier as you can control the ingredients that go into them and they’re also much cheaper to make too.
Start off by making the granola. Add oats, mixed seeds and desiccated coconut to a large bowl and mix well.
Then add melted butter, honey and vanilla and mix again.
This is a nut free granola but feel free to add some chopped nuts to it if you like. Just be careful to chop them very small for toddlers and younger children as they can be a choking hazard.
Divide the granola mixture between two baking trays and bake in the oven for 20 minutes.
You will need to stir the granola twice whilst baking as the edges tend to cook quicker than the middle.
Whilst the granola is cooking add a bag of frozen berries to a saucepan with a little honey and cook on low for 10 minutes.
As the berries defrost they will break down and make a lovely berry compot. If any of the bigger berries are still intact you can break them up with a spoon.
Once the granola is cooked and cooled, transfer it to an airtight container to store.
It will keep for 2 weeks completely fresh if you use a good airtight jar or container.
To store the berry compote you have two options.
1 – You can transfer it to individual pots like I have here, top with yogurt and store in the fridge for 4 days.
2 – You can store the berries on their own in a container in the fridge for 4 days.
When ready to eat, top with the granola and enjoy!

Ingredients
For the Granola:
250g oats
60g mixed seeds
25g desiccated coconut
60g butter, melted
3 tbsp honey
1 tsp vanilla
For the Parfait:
500g frozen mixed berries
2 tbsp honey

Instructions
Preheat the oven to 180c fan.
Mix the oats, seeds and desiccated coconut in a large bowl.
Add the melted butter, honey and vanilla and mix again.
Divide the granola mixture between two baking trays, spreading it evenly across the trays.
Bake for 20 minutes, stirring it twice as the granola at the edge of the trays will cook a little quicker.
In the meantime add the frozen berries and honey to a saucepan and cook on a low heat on the hob for 10 minutes.
The berries will soften as they cook but you can break up any larger berries with a spoon.
When the granola has cooked, allow it to cool for about 10 minutes on the tray to crisp up. Then transfer into an airtight container to store.
The berry parfait can either be stored in one large container or divided into smaller individual pots and topped with yogurt.
Notes
The granola will keep in an airtight container at room temperature for up to 2 weeks.
The yogurt and berry parfait will keep in the fridge for up to 4 days.
