Kitchen One-for-One sets up in Idaho Springs

Every other Wednesday a brightly colored food truck arrives at the Clear Creek Metropolitan Recreation District in Idaho Springs, it’s the Kitchen One-For-One crew and it means freshly made tacos are on the way to whomever wants them, for free.
A buffet style system is set up inside the rec center where a crew of volunteers makes fresh soft tacos, with sides including queso mac & cheese, corn or flour tortillas, green chile chicken, beef or pork and grilled veggies.

“We wanted to serve really good food with healthy choices,” Tracy Kinner, with Kitchen One-for-One said.
Kinner said she’s been volunteering with the non-profit for eight-years and truly enjoys the feeling of giving back to the community while also providing free, healthy meals that were prepared on-sight with fresh food.
“It’s healthy food and it gives people a lot of choices because a lot of time when you’re getting free food you get the plate that is already made,” Kinner said.
Kitchen One-for-One prepares hundreds of fresh meals each week and in addition to working Clear Creek County it serves several other locations “down the hill”.
“I think up here a lot of people don’t realize there is food insecurity in the mountains and there is,” Kinner said.

The meals are offered for free to anyone who shows up at the rec center in Idaho Springs, there is a donation box at the end of the food. Kinner said any donation is appreciated but is not expected nor ever requested by staff.
On its website the group explains it was started by a couple of friends from a local church. Kitchen One for One and its volunteers are delivering compassion, connection, and restaurant-quality meals to those in Denver who need it most.
In the aftermath of COVID-19, many of our homeless and impoverished neighbors are more at risk than ever. However, with your help, together we can offer them an amazing meal and a message of hope and dignity, according to its website.
The food truck is scheduled to stop by the rec center in Idaho Springs next August 6, serving typically begins around 5 p.m.
