Rice Cake Clusters

Super simple two ingredient Rice Cake Clusters. Perfect for a homemade snack with no cooking or baking required!
I am not even joking when I say that these Rice Cake Clusters have been made on repeat on my house all this week!
The idea came to me when I had a packet of rice cakes that my son asked me to buy but then refused to eat. I hate wasting food so instead I made them into this little chocolate clusters and they were a massive hit!
The recipe is so simple. Just melt some chocolate in a bowl. I melt it in the microwave for about a minute. But stop it every 10-15 seconds to stir and ensure it isn’t burning.
Then crumble in the rice cakes. You want quite small pieces of the rice cakes so that you can make the perfect sized clusters that aren’t too big.
Mix really well to ensure that all the rice cake pieces are coated in the melted chocolate.
At this point you can also top with some sea salt flakes.
This gives a really nice flavour contrast between the sweet milk chocolate and the salty hit.
Refrigerate for 30 minutes until the chocolate has hardened and they are ready to enjoy.
Absolutely delicious!
It is best to store these Rice Cake Clusters in the fridge as the chocolate does start to melt a little when left at room temperature, especially if it is a hot day.
They will keep for 4-5 days in the fridge but I very much doubt they’ll last that long without being eaten!

150g milk chocolate
3 large rice cakes
optional: sea salt flakes

Instructions
Break the chocolate into a bowl and melt in the microwave.
Microwave for about 1 minute, but stopping to stir every 10-15 seconds to ensure that the chocolate doesn’t burn.
When the chocolate is melted, break in the rice cakes. You want to get the pieces of rice cake quite small.
Mix really well so that the rice cake pieces are all coated in the chocolate.
Add a small spoonful of the mixture to a lined baking tray. You should be able to make 15 clusters from the mixture.
This is totally optional but you can also add a sprinkling of sea salt flakes to the top of each cluster. The contrast of the sweet chocolate with the salt is really delicious.
Refrigerate for 30 minutes.
Notes
These Rice Cake Clusters are best kept in the fridge. They can be kept for 4-5 days.
